After the war and for a period of about thirty
years, the structure, which had arisen in the
beginning of last century, was used for the
contribution of grapes originating from the
vineyards of the Riserva Naturale dello
Stagnone (nature reserve Stagnone) and the
neighbouring region. Some years ago the company
was taken over by the family Bonomo who
has started a process of complete restructuring
of the infrastructure and the working techniques.
In the area facing east there is a big
collection of casks made of valuable English oak
which contain wine with an ageing of more than
thirty years. This means a nearly infinite
source of leavening.
In the depots facing south a "barriqueria" has
been carried out in a thermocontrolled
environment. The wines are secluded here for
further refining.
Regarding the taste, the wine products of the
Cantine Mothia always present themselves solid
and well-balanced, whole and complete. The
family Bonomo carries out a very careful
selection of the most valuable grapes which are
vinified with Carthusian care and broad
utilisation of modern technologies in order to
obtain products of great quality.
